How to Choose Good Fish: Signs of Quality
A quick guide to the signs that help you pick high-quality fish.
When choosing fish, clear signs indicate quality:
1. Eyes: clear, shiny and not sunken.
2. Gills: pinkish red, not brown or grey.
3. Smell: a light sea smell, not a strong pungent one.
4. Texture: firm flesh that springs back when pressed.
5. Scales: shiny and firmly attached.
For frozen products, check the pack is intact with no thick ice layers, the production and expiry dates are clear, and the product is stored at -18°C.
